To start with, the customers are managed by the master/owner comfortably through the bookings by phone. Then, the customers would be able to enter the restaurant with good impression and warm hearted comfort knowing they will be seated. When the customers enter the restaurant, they are willingly welcomed by cheerful greetings of the chefs and servers. Everybody has good hospitality which may derive from the masterfs manner. Every customer easily understands that this is the reason; behind a great master, there are always good workers. The restaurant is simple and clean with Japanese atmosphere and free of vain flamboyance. There is one big wooden table at center, with a few 4-seat tables by the wall and gZashikih (Japanese style room) at buck side. At first sight the restaurant seems like a kind of pub, but the dishes served here are truly delicious, reminiscent of gKappoh restaurants (Japanese traditional style exclusive restaurant). Especially the kitchen staff is quite proficient in preparing fish. Customers need no patience to eat here unlike at some other restaurants in Hawaii. Usually the ingredients are frozen in Hawaii because everything is imported. The cook then requires special skills and needs to pay a lot of attention and care when preparing a dish. According to frequently visited customers of the restaurant, the master is an expert of Kendo (Japanese traditional sword fighting) therefore he knows the manner of Samurai. Ancient Samurai studied Tea ceremony. They are completely aware of the concept of gh (once in a lifetime chance). They always think of their encounters with customers as a one-chance opportunity, so they try to do their best when attending to the customers. The customers are satisfied when they leave the restaurant full of warm memories. They eventually revisit the restaurant like they do in their home towns. I hope this restaurant continues to be successful for the local Japanese Hawaiians and maintain the excellent sense of taste of good Japanese food.
